yes proxy trick would work.
you can also host AP from your PC, connect your i-device into that AP and then you have full control over all the packets. Check here for proxies that can intercept packets:
http://sethioz.com/mediawiki/index.php/ ... ng_Proxiesi can't tell you from head, but somehow you can make all traffic go thru one of those proxies, so you can edit the stuff from PC. i haven't checked for proxies for years, maybe there are better tools out there now, some sort of network interceptors that can edit packets before they are sent/received, using those tools you can easily hack any device.
